This is a Dairy Free ice cream at its finest. it uses a custard-style base making it stand out amid other vanilla ice creams and is relatively easy to make.

Ingredients

Ice Cream

8 Large Egg Yolks
2 Tablespoon Light Corn syrup
1/2 Cup Granulated Sugar
1 Tablespoon Granulated Sugar
1 Cup Oat Milk (Thick and Creamy)
1 Cup Heavy Whipping Cream (Dairy Free)
1 Teaspoon Vanilla Extract

    Prepare the Ice Cream:

    1. Fill Large Bowl with ice water and set aside.
    2. In a small saucepan, whisk the egg yolks, corn syrup and sugar until the mixture is fully combined and the sugar is dissolved.  (Do not do this over heat).
    3. Whisk in the Milk, Heavy Cream, and Vanilla Extract until combined.
    4. Place the Pan on medium heat. stirring constantly with a rubber spatula until the temperature reaches 165 to 175 degrees. 
    5. Remove Pan from the heat and pour the base through a fine-mesh strainer into a clean Creami Pint container. 
      • Do this slowly as to not over fill the mesh and spill out the sides.
      • Mix should reach near the Max Freeze line on the container.
    6. Place the container into the ice bucket making sure it is surrounded in ice and the container cannot spill.
    7. Once the base has cooled, cover it and place the container into the Freezer for 24 hours.

    Mix the Ice Cream:

    1. After 24 hours you can remove the pint from the freezer and remove the lid, fill the container to the max fill line on the Creami Pint container with Oat Milk. 
    2. Place the pint into the outer bowl of your ninja Creami and install the lid with the Creamerizer paddle.
    3. Place the assembly onto the motor base and lock it into place.
    4. Select Ice Cream function
  1. Note: at this point it is edible and will have a consistency close to a Wendy's Frosty If you want a more consistent Ice Cream look at consistency to it proceed to the Second Freeze.
  2. Second Freeze:

    1. Place the lid back on the container and place the container back into the freezer.
    2. Freeze for at least 24 hours.
  3. Once the second Freeze is done you will be able to scoop and serve like Ice Cream, and it will not need to be processed again with the Ninja Creami.
